The Indian Institute of Spices Research (IISR), Kozhikode (Calicut) a constituent group of Indian Council of Agricultural Research (ICAR) is a significant Institute committed to look into on flavors. In 1976, it began as a Regional Station of the Central Plantation Crops Research Institute (CPCRI), Kasaragod occupied with research on flavors. 

A National Research Center for Spices was built up in 1986 with its central command at Kozhikode, Kerala by consolidating the recent Regional Station of CPCRI at Kozhikode and Cardamom Research Center at Appangala, Karnataka. Understanding the significance of Spices Research in India this Research Center was moved up to Indian Institute of Spices Research on first July, 1995. 

The labs and regulatory workplaces of the establishment are situated at Chelavoor (50m above MSL), 11 km from Kozhikode, Kozhikode District, Kerala on the Kozhikode-Wyanad street (NH 212) in a region of 14.3 ha.
